Dampfnudeln with delicious plum compote

A light and fluffy temptation.

Ingredients for 4 portions:

  • LAWA Dampfnudeln
  • 600 g plums
  • 3 tbs sugar
  • 200 ml plum juice
  • 1 lemon
  • 1 vanilla bean
  • 1 tsp corn flour/starch

Method:

Leave the sugar to slowly caramelise in a pot. Boil with the plum and lemon juice. Halve the vanilla bean, scrape out the pulp with the back of a knife, and add to the mixture. Bind with the corn flour/starch and leave to cool. In the meantime, place the Dampfnudeln in a sieve, and place the sieve over a pot of boiling water. Leave the closed pot to steam for approx. 10 minutes. Ensure the Dampfnudeln do not come into direct contact with the water. Serve the Dampfnudeln with the poppy-seed & sugar mixture and plum compote.
