Pancake pockets with mixed vegetable filling and chicken breast

Sophisticated and spicy!

Ingredients for 5 people:

  • 5 fine LAWA pancakes
  • 250g chicken breast
  • 1 onion (red)
  • 1 zucchini
  • 1 red bell pepper
  • 1 tin corn
  • 3 tbs olive oil
  • 100 ml vegetable stock
  • 1 bunch parsley
  • Pepper, cayenne pepper, salt

Method:

Wash the chicken breast and cut into strips. Finely chop the onion, and wash and dice the zucchini and bell pepper. Sear the chicken breast in oil, add and sauté the onions, then add and briefly fry the zucchini, bell pepper and corn. Pour in the stock, bring to the boil, and season the vegetables with pepper, salt and cayenne pepper. Braise on a low heat for another 5 minutes. Chop the parsley, heat the pancakes as per the packaging instructions, fill with the vegetable & meat mixture, form into pockets and fold together.
