Bohemian-style bread dumplings with goulash

The dream lunch duo: typical of the region and gloriously grounded.

Ingredients for 4 people:

  • LAWA Bohemian-style bread dumplings
  • 800 g beef
  • 500 g onions
  • 300 g shallots
  • 1 medium-sized potato
  • 3 tbs concentrated butter
  • 1 tbs sweet paprika
  • 1 tsp hot paprika
  • 1/2 tsp caraway
  • 2 tbs tomato purée
  • 500 ml meat broth
  • Paprika
  • Sour cream to serve

Method:

Peel the shallots, onions and potato, finely dicing the potato and cutting the onions into thin rings. Cut the meat into bite-sized chunks, season with salt and pepper, and sear in the concentrated butter. Remove the meat and sear the onions and diced potato. Add the meat again, stir in the tomato purée, and season with paprika and caraway.

Sauté while stirring, add the meat broth, bring to the boil, cover, and leave to simmer for approx. 1.5 hours, stirring occasionally. After 1 hour, add and cook the shallots, and season to taste with paprika.

Meanwhile, place a sieve over a pot filled approx. 1/3 with boiling water. Place the bread dumpling pieces into the sieve and leave to steam in the closed pot for approx. 5 minutes. Serve the finished goulash with the dumplings and sour cream.
